From 18 year old vines grown in 4 hectares of clay soils in Castelnuovo Rangone Modena, the grapes are hand-harvested in October, macerated for 5 days in steel barrels (100hl) and fermented with ambient yeasts for one month under temperature-control utilizing the Charmot Method. The wine spends 2 months on lees with bâtonnage every other day. Aged in bottled for one month before release. Purple farmer fizz that's bone dry with brambly wild fruit and herbs.
