Stefania did not start out as a winemaker and therefore was not bogged down by 'rules'. She makes DOCG Gavi by instinct and allows the fruit from the village of Belvedere Tassarolo (on the border with Liguria) to speak for itself. The Cortese from clay soil is grown according to organic methods and vinified through malolactic fermentation for the greatest expression, making for a much more interesting Gavi.
Medium-bodied, dry. Golden in the glass with aromas of melon and flowers. The palate is dense yet balanced with lots of acidity and mineral notes. Finishes with creamy lemon and marzipan. Pair with hors-d'oeuvres, seafood, white meat, and young cheeses.
