Amarone della Valpolicella Classico, Viviani 2016 (Veneto, Italy)

70% Corvina and 30% Rondinella from organic vines between 10 and 80 years old planted on limestone laced with fossilized pink coral. The grapes are hand harvested and dried for 5 months, then wild fermented and aged for 3+ years in a mix of French and Slavonian oak barrels of varying sizes. Powerful and complex, but at the same time nuanced and detailed with spiced dark cherry and plum fruit, chocolate and leather. Serious business from one of the best producers in the region. Tastes like Christmas.
