Chateau-Thebaud has it's own special granite, Granite de Thebaud and this wine comes from a south facing 1.5 hectare plot of 25-70 year old Melon vines, whole cluster pressed, then wild fermented and aged on the lees in underground glass lined concrete tanks for 3.5 years.
