100% Gamay from a single 60 year old vineyard planted on steep slopes in the northern Beaujolais Cru of Chenas. Paul-Henri Thillardon and his siblings farm biodynamically and take a natural approach in the cellar. This spends 20 days whole cluster cool carbonic, then aged on the lees in cement and old barrels of different sizes, then bottled unfiltered with minimal sulfur added.
