Chenin Blanc "Triple Zero", Domaine de la Taille Aux Loupe NV (Loire, France)

Chenin Blanc hand harvested from prized plots of 40+ year old vines in Montlouis-sur-Loire made by the legendary Jacky Blot, who is one of the masters of this grape. While this is dressed up as a Champagne method cremant, it's actually a pet-nat fermented spontaneously and really slowly in old barrel, then bottled before fermentation is complete and aged on the lees for 24 months before disgorging. Complex and bold, while still being crisp and fresh with pear and apple fruit, citrus blossom and spice. Proper holiday bubbles.
