100% Chkhaveri, a pink skinned grape (think Pinot Grigio), grown organically in the hills of western Georgia, not far from the Black Sea, by Zurab Topuridze and his family. This is wild fermented whole cluster and macerated for 1 week, then aged in Qvevri for a few months. Medium plus with smoky wild orchard fruit, baking spice with some cidery funk and a little sparkle that calms down after it opens up. Decant and drink grilled sausage.
