Independent native yeast fermentation, some carbonic, then blended post-pressing and aged in concrete. Inspired by rouge bistro cuvées from Touraine -- spry, yet deep, with aromas of violet, red currant, and graphite. Juicy, clean, & mineral palate of black pepper, dried leaves, stewed cherries, and baking spices.
