This Gamay is from a plot in Flagey-Echezeaux in the Côte d’Or that borders the Grand Cru. It sees two weeks of strict carbonic maceration and a 7-month resting period in tank. Aside from being flat out delicious, this is a special project in honor of Josh Adler, the founder of Paris Wine Co. who imports this and many other wines we love. Josh lost his battle with cancer last year and this wine was made by Marc as a tribute to him and a portion of the profits go to pancreatic cancer research.
