Gruner Veltliner Hollenburger, Christoph Hoch NV (Osterreich, Austria)

Biodynamic Gruner from terraced vineyards around Hollenburg. Christoph ferments and ages everything in large old barrels and treats each barrel as an experiment- some with skin contact, some with no malo, some whole cluster, etc, then he blends to taste, always using multiple vintages- 40% from the current vintage, 40% the previous vintage and 20% three vintages back. Wild and unique with textured, hazy yellow fruit, but unmistakably Gruner with notes of white pepper, cucumber and lime zest.
