Lo Sfuso di Collina, Monteforche NV (Veneto, Italy)

This is a blend of mostly Cabernet Franc with a number of heirloom varietals from younger organic, dry farmed vines planted on volcanic soil in Colli Euganei, in the hills just south of Padua. This spends a couple of weeks on skins before aging in cement for around a year before getting bottled unfiltered with almost no sulfur added. It's bottled under a crown cap and might be a little spritzy when you first open it, but this isn't a sparkling. Light to medium bodied with dark fruit and earth, but a juicy lipsmacking finish. This should definitely go in the fridge for awhile before serving.
