When we think of what a pet-nat should be, this Chenin Blanc from Pascal and Moses (who only make pet-nats!) in the Touraine checks all of the boxes. Crisp and bright with racy crushed pears and green apple with weightless bubbles and a mouthwatering finish. Serve nice and cold, preferably while the sun is still out.
Muscadet Sur Lie "La Pepie", Domaine de la Pepiere 2019 $20 If you try to think of a single producer in any region that exemplifies that area most precisely, Domaine de la Pepiere is maybe the best example in the world. This is what Muscadet should taste like. Laser focused with bright lemon and crushed seashells with an airy lightness, but at the same time round and textured from the time on the lees. Perennial summer classic.
Vin Blanc, Clos du Tue-Boeuf 2020 $24 The Puzelat brothers are the genesis of the natural wine movement in Loire. Full stop. They have been preaching the gospel of good growing and low intervention since the 90s and countless superstars of the movement have spent time in their cellar over the years and taken their ideas to every wine region in the world. This is their declassified Sauvignon Blanc from organic plots of younger vines in Cheverny pressed whole cluster and made all in steel. Bold, ripe and expressive, but light on its feet with fleshy tangerine and crisp apple notes. Fish taco wine of champions.
