Pet-Nat Rose "Limo d'Anes", Domaine Des 2 Anes 2019 (Languedoc, France)

100% Carignan from 70 year old biodynamic vineyards in Corbieres, fermented with wild yeast and bottled before it finished, undisgorged with no sulfur added. Keep this one ice cold and open near a sink or many eager glasses. Lots of foam, but once that settles down, it gives way to smokey dark red fruit and wild herbs with a dry, crisp finish.
