Riesling grown without chemicals on Devonian grey slate, wild fermented in a mix of steel and old foudre, then aged on the lees until spring. Claus Piedmont and his daughter Sitta work a small plot in Filzen with thrilling results. Classic Saar: crunchy, weightless, and electric with just a touch of sweetness to balance out the racy acidity.
