Frederic Cossard is your favorite winemaker's favorite winemaker and while he works with a number of more "prestigious" vineyards, this wine is the the one to drink from him. This was his first vineyard, a single plot of 50+ year old Pinot Noir planted on the highest, steepest limestone slope in Saint-Romain, west of Pommard. Fred practices something close to Biodynamics that he refers to as homeopathic farming, preparing different tinctures for different vineyards. The grapes are hand harvested and wild fermented, whole cluster in open topped barrel for a month or more, then pressed off and aged for a year in a combination of old barrel and huge concrete eggs, then bottled unfiltered with no sulfur added. LIVELY is the word, with energetic red fruit like ripe pomegranate and sour cherry that opens up to a savory vegetal streak and lean, precise minerality. Absolute show stopper that everyone will love.
