Francois Ducrot is working with small farmers growing organically in the hills of Aspiron, just west of Montpellier. This is 100% Cinsault from a single vineyard, destemmed and wild fermented in steel, where it ages for 6 months before getting lightly filtered and bottled with almost no sulfur. Another juicy one to serve with light chill and something spicy.
