Thanksgiving Champagne and Burgundy Trio

1er Cru Extra Brut "La Nature'L", Herve Rafflin NV (Champagne, France) $40 Equal parts Pinot Meunier, Pinot Noir and Chardonnay from organic vineyards in the heart of Montagne de Reims. 60% of this wine is from 2017 with rest coming from the family's reserve wines, disgorged in 2020 with a tiny dosage making this beautifully balanced and really friendly. Herve is basically a garage winemaker producing around 10,000 bottles or less every year and working as naturally as possible.

Chablis "La Boissoneuse", Julien Brocard 2019 (Burgundy, France) $35 Chardonnay from a single 30+ year old vineyard farmed biodynamically, hand harvested and wild fermented, then aged in large, old foudre for 10 months. Such a beautiful expression of Chablis. Focused minerality with generous notes of ripe tangerine and lime zest, complex and energetic.

Saint Romain "Sous Roche", Domaine de Chassorney 2018 (Burgundy, France) $60 Frederic Cossard is your favorite winemaker's favorite winemaker and while he works with a number of more "prestigious" vineyards, this wine is the the one to drink from him. This was his first vineyard, a single plot of 50+ year old Pinot Noir planted on the highest, steepest limestone slope in Saint-Romain, west of Pommard. Fred practices something close to Biodynamics that he refers to as homeopathic farming, preparing different tinctures for different vineyards. The grapes are hand harvested and wild fermented, whole cluster in open topped barrel for a month or more, then pressed off and aged for a year in a combination of old barrel and huge concrete eggs, then bottled unfiltered with no sulfur added. LIVELY is the word, with energetic red fruit like ripe pomegranate and sour cherry that opens up to a savory vegetal streak and lean, precise minerality. Absolute show stopper that everyone will love.
