An exciting rarity, a formerly popular regional grape variety—of which now only 50 hectares planted in the world! A long growing period requires the grapes to stay on the vine until late October or November. No herbicides or pesticides are employed here, but Todd uses algae from the Spanish coast as natural protection from insects. Fermentation is spontaneous, and sulfur (at bottling) is extremely low. The resulting wine is delicious: Crushed cherries and fresh rosemary, savory and juicy all at once.
