Airen Tinaja de Sol a Sol, Esencia Rural 2017 (La Mancha, Spain)

Disclaimer: This wine is not for everyone. Julian Ruiz is a master farmer and a wild man growing grapes and food in the hills of Toledo. This is 100% Airen from old pre-phylloxera vines that have never seen chemicals, hand harvested and partially destemmed with some of the grapes having botrytis, left on the skins for 153 days in 3 clay amphora that are buried in the vineyard where the grapes are grown, then bottled unfiltered with no sulfur added. Deep amber, full funk, opens up beautifully with notes of fennel seed and baked lemons. Strictly for the Adventurous!
