This wine is the result of a special pressing of the grapes (the fleur) that reserves the optimum juice for this cuvee to ensure a rich yet delicate must.
From 25 year old vines, this is hand-harvested, wild yeast fermented in stainless and neutral barrels (56%). It is redolent of red apples, lemon, and toasted brioche notes, ending with a long crisp finish.
