Treixadura 70%, Godello 15%, Caiño blanco 10%, Torrontes 5%
A fantastic field blend of traditional grapes, this wine is from 30+ year old vines, treated organically, and densely planted on "sábrego", a type of soft granite, mixed with stones and gravel. Sábrego soils are very highly acidic, very poor in organic material and drain well. The grapes are gently pressed with a pneumatic press, with inclusion of small percentage of selected ripe stems. Fermentation is over 14 days at cool temperatures in stainless steel tank. No malolactic fermentation, and at bottling the wine is lightly fined and filtered. It offers sweet lemon curd, quartz, on a medium frame, while the mid-palate displays a touch of floral and stone fruit notes, matched by a snappy acidity on the finish. Fantastico!
