100% Pinot Grigio from a single organic vineyard in Oltrepo Pavese, just south of Milan. The grapes are hand harvested and left on the skins overnight, then pressed off to steel tanks to wild ferment, then 25% of the juice is moved to clay amphora to age for 10 months, before it is all blended and bottled unfiltered with minimal sulfur. Not an orange wine, but leans in that direction with textured, musky orchard fruit and wild flowers with a mineral finish. Dreamy with fish curry.
