Prosecco Col Fondo, Mongarda 2020 (Veneto, Italy)

Old school farmer Prosecco made from a single organic vineyard planted in 1950 with mostly Glera and a few other obscure native grapes like Verdiso and Bianchetta Trevigiana, all hand harvested and pressed together whole cluster, then wild fermented in concrete. Undisgorged, so it's cloudy, but drinks beautifully with salty lemons and wild herbs.
