100% Sauvignon Blanc. Averaging 20 years old, Valérie's vines are planted on clay-limestone soils in the heart of the Cher valley of the Touraine region in the Loire Valley. The grapes are hand harvested, destemmed and direct-pressed, with the juice cooled down immediately and settled naturally. Fermentation is spontaneous with indigenous yeasts in stainless steel and fiberglass vats, where it also ages on the lees. Classic with bright green apple, citrus and fresh cut grass and a zippy, clean finish.
